Day 7-Favorite movies

The movies I love... Well there are a lot, but here are some of them that I can think of right now...

 I've always loved Sleeping Beauty. I don't know if it's because the animals don't actually talk back to her or the fact that the prince is really one of the only good looking ones in all the disney princess films. I just love it.

I also love Dan in Real Life. Because it reminds me so much of so many things that have happened with my family. The teenage girl makes me laugh. I just think it's down to earth and funny.

 I'm a sucker for classic movies like Pillow Talk with Rock Hudson and Dorris Day. I love these kinds of movies! I like to watch them with my grandma.

 Weather it's the A&E version or this one... I love it! I think it's a great movie and a perfect chic flick.

 I love this movie! It's the perfect combination of action/adventure, comedy, love and fantasy. If you haven't seen it, you are missing out!! It's really really great!

I love the Borne series. I think they were all very well done and really keep you captivated.

I'm also a sucker for musicals! All of them. I just love them. They are fun and whimsical and just all around good!

Actually, who am I kidding? I love all movies... it has to be really awful for me to not like it. Growing up, my favorites, or at least the one's I remember watching a lot were:

Day 6- A person I love

Well, I just did a post yesterday about a bunch of people I love. But this post is all about Nathan. Big surprise!

 First, let me tell you a little about Nathan, and then you'll be able to see why I love him! Nathan is an ER nurse at IMC and he is very passionate about his job! He is continuing his schooling to learn more about nursing and to better his options later on. He loves to study about nursing and gets exciting when he talks about it. He also loves skyscrapers. He spends a lot of time reading up in the skyscraper magazine about new developments and buildings. I'm pretty sure there isn't a thing in Utah being built that he doesn't know about. He also loves food. He knows what tastes good and is constantly sharing his knowledge with those around him. I love going out to eat with him because we are always trying new restaurants and new types of food. He is also a really good cook. One time we decided we wanted some chili so we just whipped it out of thin air and it was so good!!  He is also a nerd. which isn't saying much, except those who know me know that I'm a nerd, so it's perfect. Although, he has turned me into a bigger nerd. He loves the show Stargate and has gotten me addicted to it as well. He's like a little kid when him and his cousin get talking about the sci-fi world. He loves to read lots of different kinds of books and loves politics, which I'm glad about because he keeps me well informed. He is very close with his family and you can tell how much he loves them. He is creative, although he says he isn't. He is always coming up with creative things to do. One time we had a rootbeer tasting date. We bought a bunch of rootbeer and did a blind taste test to see which one was really the best... the winner: Teddy's from smiths. Not only is he all around wonderful, but he also treats me really well! He is always so sweet and tells me he loves me and is always sharing things with me and doing random things for me and he is always there to talk to and he is such a good listener. He encourages me to follow my dreams and helps me achieve my goals. I love all his smiles.. yes he has different kinds of smiles. It helps me know what is going on inside his head. :) I just love him to pieces! I'm such a lucky girl!! 

Day 5-Your Family

My family is pretty great. I have a wonderful mother who did such a great job raising us. Her name is Terri. As many of you know, she is a mix of Martha Stewart and Mother Teresa. I really am surprised that she hasn't been taken up into heaven like Enoc. She is so sweet and kind and funny and talented and is always helping others. I love her to a million pieces!!

 She birthed 6 kids. Brian is the oldest and he is somewhere around 36 I think. He loves fishing, camping and spending time with his family. He is engaged to be married to Ashley and between them they have some really cute kids! Whitnee is 19 is really good at dance and she is super funny, Qyncee who is 14 and is super athletic and super smart, Gracee is 11 and is really funny and super dramatic. Hunter is 9 and is so sweet and really good at video games. Jo Jo is 4 and is so cute and loves her mommy.

Scott is next. he is 35 and loves motorcycles, motocross, his wife and his kids. He is married to Cassi. Cassi is such a good mom. She loves spending time with her kids and reading. They have 2 kids. Baylee, who is 6 loves horses and goofing off with her brother Deegan, who is 4. Deegan is sometimes shy, but he is a big tease! I'm lucky because I live with them!

Then comes Missy, she is 31 is little miss creativity. She is always making new things or trying new recipes or  doing something amazing. She loves her husband and her kids and is married to Jimmy. Jimmy is a chinook pilot for the army. He loves Utah football, video games and his family. They have 2 kids, Madeline who is 2 loves animals, bubbles, making things with mommy, playing with daddy and her brother Lucas, who is almost 1.  Lucas has the cutest biggest smile that will just melt your heart. I was lucky enough to live with them for a whole year in Hawaii. I miss them!!

Then there is Mark he is 29 and loves to fish. I think he would fish all day if he could. He works as a welder and is really good at it. He is married to Heather who loves her kids.  They have 3 kids. Aubree is 9 and is very creative, Brylee is 5 and is very smart and goofy. Conner is 4 and is just like his daddy.

Then there is me... well, I won't say much about me, just that I am 27 and fall in right here.

And last of all there is Samantha she is 25 and loves football, spending time with her girls and music. She has 2 girls Abbey, who is 3 loves to tease and loves coloring and hanging out with Grandma. Chloe is 2 and loves to tease and loves her grandma and grandmama and aunt nat.

And that is my familia!!

Day 4- A favorite recipe

For Dinner:

HONEY LIME CHICKEN ENCHILADAS

6 tablespoons honey
5 tablespoons lime juice (1 large lime)
1 tablespoons chili powder
1/2 teaspoon garlic powder
1 pound chicken, cooked and shredded (I used 3 small chicken breasts)
8-10 flour tortillas
1 pound monterey jack cheese, shredded
16 ounces green enchilada sauce
1 cup heavy cream (to lighten them up, I have substituted sour cream with good results)

Mix the first four ingredients and toss with shredded chicken. Let it marinate for at least 1/2 hour (I tossed mine together in a ziploc bag in the morning and let it sit in the refrigerator all day).
Pour about 1/2 cup enchilada sauce on the bottom of a 9X13 baking pan. Fill flour tortillas with chicken and shredded cheese, saving about 1 cup of cheese to sprinkle on top of enchiladas. Mix the remaining enchilada sauce with the cream and leftover marinade. Pour sauce on top of the enchiladas and sprinkle with cheese. Bake at 350 degrees for 30 minutes until brown and crispy on top

For Dessert:

CHEESECAKE!! By far the best cheesecake recipe I've ever tried!

Crust

1 ¾ cup finely crushed Graham Cracker (1 package)

½ tsp Ground Cinnamon

¼ cup white sugar

½ cup melted butter

Mix all ingredients together, shape crust and bake at 450 degrees until starts to brown. Take out and cool completely before adding cheesecake filling.

Filling

1 cup Heavy Cream (1/2 pint carton)

2 ½ lbs (5 – 8 oz pkg) Cream Cheese at room temperature

1 1/3 cup White Sugar

3 Tbsp Flour

1 tsp Vanilla

5 Eggs

2 Egg Yolks

Mix heavy cream to lubricate bowl. Add cream cheese until smooth. Add sugar, flour, and vanilla. Add eggs one at a time and then add egg yolks. Pour into crust. Bake at 450 degrees in a water bath (fill a cookie sheet with water and place the cheesecake in the middle). Bake until it starts to brown a little on the top (usually 10 minutes but may take up to 20) , then reduce heat to 200 degrees and bake for 1 hour, refilling the water bath as needed.  Remove from oven and cool for 2 hours before removing from pan

Day 2-Meaning behind your blog name

Well, my blog is named after me. The meaning behind my name is quite a story. Natalie means born at Christmas, now either I was really really late, or my mom just hoped I would come early?? This is what I found for the meaning of my name:
Natalie is the English form of Natalia, which is derived from the Italian "natale," meaning "birthday." The term refers specifically to Christ's birthday - the Italian phrase for "merry Christmas" is "buon natale!", literally "good birthday!"

The surname Horrocks has a debated meaning. On the facebook group, "Your a Horrocks" (yep, that's grammatically correct according to the group), there is a discussion on what people have been taught about this amazing last name.

One origin suggest that it is a name for someone who worked as a shipwright or a sailor. The surname Horrocks is derived from the Old English word horrok, which means part of a ship. Occupational names frequently were derived from the principal object associated with the activity of the original bearer, such as tools or products. These types of occupational surnames are called metonymic surnames.

There are others who say that we were named after a city in England, other's say the city was named after us. Another meaning is that we were called that because a pile of rocks that we lived by. 

The one I was taught growing up is Horrocks means a pile of rubbish... yep, you got it I'm a pile of garbage!
